That's because all matter is slowed down by friction, light is one very light form of matter. In space there is, very very very low friction. So the light can travel far, but not infinitely. When the light is slowed down it would more to the front in the colorspectrum making it red. Stars that are too far their light that they emit will be so faint that the human eye can't see it. However, if we point a space telescope (hubbler) on a dark spot, and wait so we receive enough light on one moment that the human eye can see it. This is how Neptune was photographed in 1983. During this proces, if you hold the telescope still, the starts will more around making them have trails due to the incoming light. The light that comes in has traveled for years since it reaches our planet so there is a slight delay of several years, kiloyears because of that reason...
