It's recently come to my attention that my family is coming up for thanksgiving. My great uncle is a pastor and his family is full of missionaries. They are very anti-gay. Any ideas?

Since everyone else seem to gloss over this and not provide some useful advice, I thought I would step in.

You have two options:
1) Come out to them and face a holiday full of hateful feelings, emotional confrontations, and a spoiled dinner. Plus the memory of this event will stick with you for every Thanksgiving to come.
2) Grin and bear, smile and nod, bite your lip. It's one day of your life, you'll get through it. Eat enough turkey to let the tryptophan coma take over, pass out on the couch and the time will go by faster.

I'm all for being upfront and honest with the people that are important in your life, but I have to assume if the first thing you think about when you talk about this particular part of your extended family is that they are "anti-gay" they probably aren't a huge influence in your life. And there's nothing wrong with that - family/friends are different for different people. Just focus on the people truly important in your life, they're the ones worth the effort.
